Food Technology Part-time Studies Course

Course Details

Building on the principles of food engineering and food processing, this course looks at advanced food processing techniques and the integration of the production line from preparation through to filling and packaging. The course combines the areas of food engineering and food processing to examine the development of a product from its production from raw materials to the final product with respect to the choice of equipment and application of unit operations such as heat and cold.

Gravitying Outcomes

Upon successful completion of this course the student will be able to:

  • Explain the principles of hydrostatic processing, ohmic heating, high intensity pulsed light, etc. and their applications.
  • Apply principles of heat transfer, refrigeration and mass transfer to heating, cooling and drying technologies as well as new processing techniques - in a food production facility.
  • Apply the concepts of pre-blends and pre-mixes.
  • Evaluate and determine the degree of interaction of the chemistry of food components as affected by processing steps and methods.
  • Determine the sequence of events and the equipment used to sequentially manufacture a food product.
  • Apply “theory of constraints” to develop efficient production lines.
  • Use Energy and Mass Balance calculations to determine and correct losses.
  • Explain ERP and visual manufacturing and their applications.
  • Apply Process Mapping (and related VA/NVA and Cycle Time concepts related to process improvement) to maintain the sustainability of business operations.
